Snow Crab Salad With Kaffir Lime Wasabi Vinaigrette

Kaffir Lime Wasabi Vinaigrette 
(makes about 1 cup)

• 1/4 cup Lime Juice
• 2/3 cup Canola Oil
• 2 tablespoons White Sugar
• 2 tablespoons Wasabi
• 2 tablespoons Cilantro, chopped
• 2 tablespoons White Vinegar

For the Salad
(1 serving)

• 1/2 cup Spring Mix Lettuce
• 1/4 cup Vinaigrette
• 1/3 cup Snow Crab, cooked and flaked
• 1/8 cup English 
Cucumber, chopped
• 1/4 cup Pink Grapefruit, cut into 1/2" pieces
• 1/2 Avocado, sliced
• 1/4 Tomato, wedged
• Kosher Salt and Cracked Pepper, to taste


Put all ingredients for the vinaigrette in a jar with a tightly fitting lid and shake well. Add a quarter of the vinaigrette to the lettuce and toss gently to coat. (Reserve remaining vinaigrette for use later or for additional servings.) Place lettuce in the centre of plate. Top with remaining ingredients in your own creative way, add salt & pepper to taste, and serve.
